Greek yogurt is one of my all time favorite healthy snacks. I love that it is packed full of protein, containing about twice the amount as regular yogurts, keeping you feeling more full for a longer period of time. In addition to having Greek yogurt every morning for breakfast, I also like to cook with it. You can make recipes healthier, without losing flavor, by substituting high calorie ingredients like mayonnaise and sour cream for Greek yogurt. Here are some of my favorite guilt-free Greek yogurt recipes!
Cucumber Basil Greek Yogurt Dip
- Plain non-fat Greek yogurt
- Sea salt
- Olive oil
- Fresh chopped basil
- Whole Wheat Pita chips (I recommend Stacy's)
In a medium bowl combine Greek yogurt and chopped cucumber and mix together. Add sea salt, juice, and a little lemon zest to taste, and mix together. Then, to top it all off, drizzle a little olive oil and fresh cut basil and serve with whole wheat pita chips.
Buffalo Chicken Sliders with Greek Yogurt and Blue Cheese Dressing
For the sliders you will need:
- 1 1/2 pounds of boneless, skinless chicken breast
- 2/3 c low sodium chicken broth
- 1/2 c nonfat plain Greek yogurt
- 1/4 c hot wing sauce
- Whole wheat buns or potato rolls
Place the chicken and hot sauce in a slow cooker. Cook on high for 5 1/2 hours, or on low for 7 1/2 hours. Add Greek yogurt and let it cook for another 1/2 hour. Shred chicken and serve with whole wheat bun or potato rolls, and blue cheese dressing (recipe below). Note: These measurements can be adjusted to taste (for example if you like your sliders spicy, add more hot sauce, if you want your sauce to be creamier, add more Greek yogurt).
For the dressing you will need:
- 1/4 c of nonfat plain Greek yogurt
- 1 teaspoon white vinegar
- 1 1/2 ounces crumbled Blue cheese
- 2 tablespoons Smart Balance or Olive Oil Mayonnaise
Combine all ingredients and serve with your sliders! You can also use this as a dip for carrots and celery, or use as a healthy salad dressing. I have to give credit to my dear friends Alex Karigan and Heather Stohl for inspiring these recipes and helping me perfect them!
