Monday Meals // Chia Seed Pudding

Right off the bat I will just state that I am NOT taking credit for this beyond easy recipe....I would just like to share because it's rad and dummy-proof to prepare....no really, its equivalent to pouring a bowl of cereal. Props to my boss for turning me onto this......Chia Seed Pudding!

A few times a week my boss and I walk to one of our favorite french bakeries to grab a cold brew coffee or minty hot green tea. It's rather difficult to miss their display of over-the-top pastries and buttery croissants....however, as cliche CrossFitters, we TRY to stick to a Paleo Diet as much possible. Therefore, we inquired about the cute little glass jar of puffed earthy seeds topped with fresh mango. The barista informed us of the ingredients: chia seeds, almond milk, and mango...You know what that meant...spend the $8 to try it (and get the cute jar it comes in,) then make it ourselves from here on out!

It has been fun experimenting with ingredients to make the pudding perfect for your taste-buds.

Here is my concoction I have perfected (in my mind) below.....  

- 1 teeny tiny cute little mason jar

- 2 tablespoons of chia seeds (i used Navitas Naturals Organic Raw Chia Seeds that I purchased on Amazon.com for under $14)

- 1/2 cup of coconut milk (or you can substitute with almond milk, raw milk, etc...)

- 1 sprinkle of cinnamon

I whisk the components in the mason jar and top with whatever fresh fruit I have handy....my favorite is to add cut up mango, pineapple, blueberries, or raspberries!

Place the covered jar in your fridge overnight and when you awaken you will be super stoked to find your healthy little expanded chia seed pudding ready and waiting to be enjoyed with a cup of black coffee with 1/2 a tablespoon of melted coconut oil (try that one too...I dare you!) 

ENJOY! P.S. Let me know what seed-to-milk ratio you have found the best and what add-ins are the tastiest!

Oh & here are some benefits to Chia Seeds: - rich in omega-3 fatty acids & antioxidants - lowers cholesterol - great source of fiber - assists in helping you feel full (which I need because my middle name should be "snacky")
