Although most of the meals I make are healthy and balanced, it's always good to have a meal that can cleanse your system. This particular dish is vegetarian, but it can easily be made vegan. It's also low in fat and jam packed with nutrients and fiber. I have experimented with many, various cultural flavors and cooking techniques, and I tend to find that fusing the different flavors together results in harmony amidst all the bold flavors.
Let's begin with the sautéed veggies:
+ Touch of evoo + Leeks + Crookneck squash + Red and yellow bell peppers + Broccoli + Braised fava beans + Cilantro + Salt and pepper, to taste
Up next -- rice:
+ Evoo + Shallot + Garlic + Chili flake + Tumeric + Paprika + Cumin + Brown jasmine rice + Salt and pepper, to taste
Last but not least, finish dish with fresh lime and organic, greek yogurt. This dish is incredible fresh, but it also makes for great leftovers.
