Monday Meals // The Healthy Noodle Dish
I am a sucker for noodle dishes. When I get the craving, there is no going back--I must eat them! To avoid a feeling of guilt after devouring a bowl of them, I like to make my noodle dish myself so I have complete control over what ingredients I choose to put in the dish. As always, I choose healthy and flavorful ingredients to make the most out of my meal. This dish happens to be my favorite dish to date! I make it with udon noodles, but you can easily substitute those for buckwheat noodles for their added health benefits.
- Broth: soy sauce, starchy noodle water, chili flake, shallot, honey, orange, scallion
- Veggies: red cabbage, tomato, baby oyster mushroom, radish
- Proteins: tofu and shrimp
It's simple, it's filling, and you get to have fun with the ingredients--it's totally up to you!
