Monday Meals // Kale Chips
We love kale for so many reasons. It’s delicious and healthy and there are so many great meals from salads to stews to chips that you can make with kale. Many food experts consider kale to be the most nutritious of all the green leafy vegetables in the world. What makes kale’s nutritional value worth considering is that it is comprised of vitamin K, lutein, vitamin C, beta-carotene, and even rich in calcium. Similar to broccoli, kale also has sulforaphane, which is a chemical containing anti-cancer properties. Last night we decided to make Kale Chips as a health Snack for our Emmy’s Preview Party.
Here’s how simple this was to make:
12 large Tuscan kale leaves, rinsed, dried, cut lengthwise in half, center ribs and stems removed
1 tablespoon olive oil Sea Salt Cayenne Pepper (for spice)
Preheat oven to 250°F.
Brush olive oil evenly on Kale. (or… Toss kale with oil in large bowl).
Sprinkle with Cayenne Pepper and Sea Salt. Arrange leaves in single layer on 2 large baking sheets.
Bake until crisp, about 30 minutes for flat leaves and up to 33 minutes for wrinkled leaves.
Transfer leaves to rack to cool.
