I don’t know about you, but I am super busy! I rarely make it home for dinner before 7:30 and when I do get home I am usually starving. That being said, I LOVE to eat and enjoy finding quick, healthy and satisfying recipes. I would like to share my new favorite one with you. I love beets! They are healthy and delicious and loaded with vitamins A, B1, B2, B6 and C. Beets are also a remarkable source of folic acid, iodine, potassium and fiber. My favorite thing to make of late is beet salad. It is quick, easy and delicious!
A bag of mixed greens
A container of goat cheese
A whole package of precooked beets
1 whole avocado
1 large tomato
Finely chopped green onions to taste
Annie’s Goddess Dressing
I combine the above ingredients in a large bowl and mix. This makes a HUGE colorful salad that is great on its own or as a side with a chicken breast (or protein of your choosing). It keeps well and is fantastic the next day for lunch on the go.
